Once the lentils have sprouted (after about roughly 24-48 hours), boil for about 7 minutes.
Drain and cool.
Grate carrots and radishes, mixing in peanuts and eventually the cooled lentils.
Cut the lime and squeeze the natural juice out, covering the entire mixture. A great trick is to cut the lime in half and use a fork to squeeze out juice. Push fork in the middle of the lime and squeeze lime around it. By wiggling the fork you will also get more out of the lime.
Add in salt and pepper to taste (black salt is recommended for this recipe).
Finally, add cilantro and red onion and toss.
