Sprouted Chick Pea Salad

Ingredients

  • 2 cups of sprouted chickpeas
  • ½ onion, finely chopped
  • 1 red or yellow pepper, finely chopped
  • 1 large apple, finely chopped
  • ½ cup raisons
  • 1 cup of tofu
  • 2 tbs olive oil
  • 1 tsp of vinegar (apple cider or balsamic)
  • 1 tsp sweet mustard
  • 1 tsp salt (we recommend sea salt)

 

How to prepare:

Salad dressing:

  • Mix olive oil, vinegar, mustard and salt in a small bowl.

Salad

  • Sprout 2 cups of chickpeas from 36-48 hours
  • Cut tofu into 1cm cubes. Leave to marinate in a little bit of the salad dressing for an hour, leaving it out of the fridge.
  • Lightly frying tofu until brown on all sides
  • Mix all ingredients in a large bowl, pouring salad dressing over and mixing.
  • *The longer the salad is left, the more flavor the chickpeas will absorb.
  • Add in tofu once cooled.
  • Serve!
